Step-by-step method to prepare beetroot kanji
Start by grinding the rai and black mustard seeds into a fine powder. Peel and cut the carrots and beetroots into long batons. Add the vegetables to a clean glass jar and mix in the ground mustard, salt, black salt, red chilli powder, hing and water.
Seal the jar and place it in sunlight for three to four days to allow natural fermentation. Stir the mixture once daily during the fermentation process. Once the drink develops its characteristic tangy taste, chill it before serving.

The preparation takes about 20 minutes, while the fermentation process typically takes three to four days, depending on temperature and sunlight. The drink is best consumed once properly fermented and served cold.
