This easy summer chutney combines raw mango, jaggery, and spices for a burst of flavour in every bite

Aam Ki Launji, also known as Kairi ki Launji, is a classic Indian relish that perfectly balances sweet, tangy, and mildly spicy flavours. Made using raw green mangoes, jaggery, and a handful of everyday spices, this dish is especially popular during the summer months.

The taste profile is vibrant—slightly sour from the mangoes, gently sweet from jaggery, and enhanced with aromatic spices. The soft texture of cooked mango pieces gives the chutney a pleasant bite, making it a great companion for simple meals.

Sweet and Tangy Aam Ki Launji Recipe

This version of aam ki launji delivers a perfect mix of flavours—tangy, slightly spicy, and naturally sweet. The spices add warmth, while the mango keeps it refreshing and ideal for summer.

Ingredients:

  • 2 medium raw mangoes (peeled and chopped)
  • 2 tablespoons jaggery (grated)
  • 1 tablespoon mustard oil
  • ½ teaspoon fennel seeds
  • ½ teaspoon cumin seeds
  • ¼ teaspoon nigella seeds
  • ¼ teaspoon turmeric powder
  • ½ teaspoon red chilli powder
  • ½ teaspoon salt
  • ½ cup water

Method:

  1. Heat mustard oil in a pan over medium heat.
  2. Add fennel, cumin, and nigella seeds; let them crackle briefly.
  3. Add chopped raw mango pieces and stir well.
  4. Mix in turmeric, red chilli powder, and salt; cook for about a minute.
  5. Pour in water and let it simmer for 3–4 minutes until the mango softens slightly.
  6. Add jaggery and stir until it melts completely.
  7. Cook for another 2–3 minutes until the mixture thickens to a chutney-like consistency.
  8. Let it cool slightly before serving.

Serve with roti, paratha, poori, or rice.
