🍜 Ingredients:
- 150 grams rice noodles
- ¼ cup peanut butter
- 2 tablespoons honey
- 2 tablespoons red chilli sauce
- 2 teaspoons dark soy sauce
- Juice of half a lemon
- 2 teaspoons blended sesame oil
- Salt as required
- Shredded purple cabbage
- Chopped spring onion greens and bulbs
- Thin cucumber strips
- Sliced red and yellow capsicum
- Julienned carrot
- Edamame beans
- White sesame seeds
👩🍳 Method:
- Soak the rice noodles in hot water for a few minutes until they soften, then drain well.
- In a separate bowl, prepare the sauce by combining peanut butter, honey, chilli sauce and soy sauce. Add lemon juice, sesame oil and salt, and mix until smooth.
- Place the softened noodles in a large bowl and add all the prepared vegetables.
- Pour the sauce over the mixture and toss everything together until evenly coated.
- Finish by sprinkling sesame seeds on top and serve immediately.
