New Delhi: When comfort food meets bold flavours, the result is something truly satisfying—and Sanjeev Kapoor’s take on Thai-style peanut noodles fits the bill perfectly. Designed for those moments when you crave something spicy yet comforting, this dish brings together rich textures and vibrant ingredients in a simple, homemade recipe.

Instead of ordering in, this easy-to-make noodle dish offers a healthier and fresher alternative. The highlight is the peanut butter-based sauce, which delivers a creamy consistency balanced with sweet, tangy and spicy flavours.


🍜 Ingredients:

  • 150 grams rice noodles
  • ¼ cup peanut butter
  • 2 tablespoons honey
  • 2 tablespoons red chilli sauce
  • 2 teaspoons dark soy sauce
  • Juice of half a lemon
  • 2 teaspoons blended sesame oil
  • Salt as required
  • Shredded purple cabbage
  • Chopped spring onion greens and bulbs
  • Thin cucumber strips
  • Sliced red and yellow capsicum
  • Julienned carrot
  • Edamame beans
  • White sesame seeds

👩‍🍳 Method:

  1. Soak the rice noodles in hot water for a few minutes until they soften, then drain well.
  2. In a separate bowl, prepare the sauce by combining peanut butter, honey, chilli sauce and soy sauce. Add lemon juice, sesame oil and salt, and mix until smooth.
  3. Place the softened noodles in a large bowl and add all the prepared vegetables.
  4. Pour the sauce over the mixture and toss everything together until evenly coated.
  5. Finish by sprinkling sesame seeds on top and serve immediately.
