Omakase, a Japanese concept meaning “I leave it to you,” is making waves in Delhi’s bar scene by replacing menus with trust. Instead of ordering a standard cocktail, guests share their flavour preferences, mood, or base spirit, and the mixologist creates a one-of-a-kind drink on the spot.

Originally rooted in Japanese dining—especially sushi—omakase places full creative control in the hands of the chef or bartender. The idea is built on expertise, seasonality, and personalisation. Now, Indian bars are adapting this philosophy to cocktails.

At omakase bars, drinks can feature unexpected local and nostalgic flavours like amla murabba, kimchi, or even Parle-G biscuits. The experience is interactive and conversational, making each cocktail unique and unrepeatable.

Delhi bars such as Call Me Ten, PCO, Omakase by Ikigai, and Sidecar are leading this trend. Guests appreciate the relief from decision-making and enjoy the element of surprise, especially after long workdays.

While still niche, omakase is gaining popularity among well-travelled and experimental drinkers. Prices typically range between ₹800 and ₹1,200 per cocktail, depending on ingredients and complexity.

Overall, omakase reflects a shift from menu-driven drinking to experience-led, bartender-focused hospitality, where trust, creativity, and personal connection take centre stage.
